Grape-Nuts® Quick Bread

 Ingredients List

  • 1 c Grape-Nuts® Cereal
  • 2 c Buttermilk, or sour milk
  • 1 ts Baking soda
  • 2 Egg whites, or 1 egg
  • 1 c Sugar
  • 4 c Whole-wheat flour
  • 4 ts S, baking powder
  • 1 ts Salt
  • 1 tb On, canola oil


Mix Grape Nuts and milk; add soda; stir well. Stir in remaining ingredients
and combine thoroughly (batter will be very stiff). Place in two well
greased loaf pans. Bake at 350° for 1 hour. When done remove from pans and
brush top of loaves with melted butter.

Per serving: 178 Calories; 2g Fat (7% calories from fat); 6g Protein; 38g
Carbohydrate; 1mg Cholesterol; 345mg Sodium
