Gratin of Roasted Cherries in Red Wine

Ingredients List
- 1 c Dry red wine
- 3/4 c Granulated sugar
- 1 3-inch cinnamon stick
- 2 Whole cloves
- 1 3-inch strip lemon zest
- (yellow part of peel)
- 2 lb Bing cherries, stemmed and
- Pitted
Directions
1. Combine wine, sugar, cinnamon stick, cloves and lemon zest in a
saucepan. Bring to a boil, reduce the heat and simmer 5 minutes. 2.
Prepare the cherries and place in a shallow baking dish. Pour the syrup
over the cherries and bake in a preheated 350-degree oven 30 minutes. 3.
Let the cherries cool a bit in the syrup. Serve warm, room temperature or
chilled with ice cream or sweetened creme fraiche.
