Gratin of Summer Berries
Ingredients List
- 1 Egg Yolk
- 100 g Selection of Berries
- 1 Vanilla Pod
- 50 ml Cream
- 50 g Sugar
- 150 ml Boiling Water
- 25 ml Sweet Wine
- 1 Lemon; (juice)
Directions
1. Whisk the egg yolk over a bain marie using the boiling water, until it
doubles in volume and is thick and creamy.
2. Fold in the remainder of the ingredients.
3. Glaze under a hot salamander / grill.
4. Serve with sorbet, ice cream or creme fraiche.
