Greek Zoodle Salad

Ingredients List
- 3 small zucchini
- 1 small cucumber
- 1/2 red onion, thinly sliced
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp dried oregano
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/8 tsp salt
- 1/8 tsp pepper
- 1 cup grape tomatoes, halved
- 4 ounces feta cheese, crumbled
- 1/4 cup kalamata olives, halved
Directions
Spiralize zucchini and cucumber and place into a large bowl. Cut any extra long pieces with kitchen shears. Add the red onion to the bowl and toss to mix in.
In a small mason jar, combine the olive oil, vinegar, oregano, onion powder, garlic powder, salt, and pepper. Screw a lid onto the jar and shake vigorously to combine.
Pour half of the dressing over the salad and toss to coat. Top with the tomatoes, feta cheese, olives and remaining dressing. Season with salt and pepper, to taste. Serve immediately.
