Ingredients List
- 4 medium chicken breasts, boneless, skinless
- 1 or 2 red bell peppers, diced
- 2 tablespoons fresh chopped cilantro, for garnish
- The Marinade
- 1/4 cup brown sugar
- 1 cup BBQ sauce
- 2 teaspoons smoked paprika
- 3 garlic cloves, chopped finely
- 1 teaspoon cayenne pepper, optional
- 2 teaspoons dried oregano
Directions
1. Combine bbq sauce, brown sugar, oregano, cayenne pepper, garlic, and paprika in a small bowl.
2. Cut chicken breasts into cubes and season with salt and pepper.
3. Marinate chicken in half of the bbq marinade for at least 20 minutes and up to overnight.
4. Drain chicken from marinade and skewer the chicken and bell pepper and grill over medium-high, drizzling some of the marinade from time to time until cooked through and lightly charred — about 2-3 minutes per side. Garnish with chopped cilantro and serve immediately with salad, rice, or noodles. Enjoy!
