Grilled Chicken with Mint

 Ingredients List

  • 1/2 c Lemon juice
  • 1/2 c Fresh mint; chopped
  • 8 Cloves garlic; minced
  • 2 tb Olive oil
  • 1/2 ts Fresh ground black pepper
  • 1 3/4 lb Chicken breast halves
  • -without skin
  • Lettuce leaves; shredded
  • 12 Pieces skewers; bamboo


In a large shallow dish, combine lemon juice, mint, garlic, oil and pepper.
Slice chicken across the grain into 1/2 inch thick slices. Add to the
lemon mixture and toss to coat well. Cover and marinate for at least 1
hour or overnight.

Soak bamboo skewers in water for at least 30 minutes.

Prepare gas or charcoal grill. Thread chicken on skewers and grill about 2
1/2 - 3 minutes on each side.

Serve over shredded lettuce. Garnish with fresh tomato wedges if desired.
