Ground Beef and Cabbage Over Rice-II

Ingredients List
- 2 lbs ground beef (I use 85/15)
- 2 14.5 oz cans diced tomatoes
- 2 tsp salt
- 1 tsp pepper
- 1/2 tsp crushed red pepper flakes
- 1 head cabbage, shredded
- 1 large onion, diced
- 3 cups shredded carrots ”“ that”™s about 4 large carrots if your using a food processor
- 2 cups uncooked white rice (I use basmati for everything)
- 4 cups water
Directions
Begin by browning beef and onions together in a large, heavy-bottom pot. I love my dutch oven for this. When beef is mostly brown, add diced tomatoes, salt, pepper, and red pepper flakes.
Cook for 20 minutes. Stir occasionally.
Add rice and water to a medium saucepan and bring to a boil. Reduce heat to the lowest setting and cover.
Add cabbage and carrots to beef mixture and stir thoroughly. It will seem like a lot of cabbage, but it cooks down.
Cook beef and cabbage for an additional 20 minutes. The rice should be done now.
Place rice on a plate and spoon beef and cabbage over it.
