Guacamole Tuna Salad

 Ingredients List

  • * 1 avocado
  • * 1 can tuna fish, drained
  • * 1/4 cup dehydrated (or sundried) tomatoes
  • * 1/2 lime
  • * 1/2 tsp cumin
  • * 1/2 chopped cilantro
  • * 2 cups baby greens
  • * 1 pinch coarse salt and freshly ground pepper
  • * 1/4 cup toasted pepitas


In a large bowl, mash the avocado. Add the tuna, tomatoes, lime juice, cumin, cilantro and pinch of salt and pepper. Stir to combine.

Add the baby greens and give it another stir.

Serve with toasted pepitas.

Lunch just landed in yo”™ face.

*if you don”™t like the idea of eating an entire avocado in one sitting, just half it.
