Guadeloupe Chicken Salad

 Ingredients List

  • 2 c Cut-up chicken; (cooked)
  • 1/4 c Sour cream
  • 1/4 c Mayonnaise
  • 1/4 c Finely chopped carrot
  • 2 tb Cilantro
  • 2 tb Capers; (drained)
  • 2 tb Finely chopped red bell
  • -pepper
  • 2 tb Lemon juice
  • 1/4 ts Ground cumin
  • 1/4 c Finely chopped onion
  • 4 tb TABASCO green pepper sauce
  • Salt to taste
  • 1 Avocado; peel, cut in wedges
  • Lettuce leaves
  • Paprika


Toss all ingredients except avocado, lettuce and paprika. Serve on lettuce
leaves with avocado wedges. Sprinkle with paprika. Add more TABASCO® green
sauce for spicier fare, if desired. Makes 4 servings.
