Guadeloupe Chicken Salad
Ingredients List
- 2 c Cut-up chicken; (cooked)
- 1/4 c Sour cream
- 1/4 c Mayonnaise
- 1/4 c Finely chopped carrot
- 2 tb Cilantro
- 2 tb Capers; (drained)
- 2 tb Finely chopped red bell
- -pepper
- 2 tb Lemon juice
- 1/4 ts Ground cumin
- 1/4 c Finely chopped onion
- 4 tb TABASCO green pepper sauce
- Salt to taste
- 1 Avocado; peel, cut in wedges
- Lettuce leaves
- Paprika
Directions
Toss all ingredients except avocado, lettuce and paprika. Serve on lettuce
leaves with avocado wedges. Sprinkle with paprika. Add more TABASCO® green
sauce for spicier fare, if desired. Makes 4 servings.
