Handheld Strawberry Shortcakes

Ingredients List
- ~~~ Strawberry syrup ~~~
- 5 strawberries, large chop stew removed
- 2/3 Cup water
- 3 Tbls granulated sugar
- ~~~ Shortcake Assembly ~~~
- 1 box Twinkies
- 5 strawberries, sliced
- 1/2 tsp vanilla extract or paste
- 4 oz whipped topping
- vanilla candiquick
- sprinkles (optional)
Directions
Make the strawberry syrup first by placing all the ingredients in a sauce pot over medium heat. Let simmer for 10 minutes, take off the heat and strain through a fine mesh colander, gently crushing the berries to get all the juice out. Set aside.
Slice the remaining strawberries and place in a bowl, add in the whipped topping and vanilla, mix to combine.
Slice the twinkies down the middle length wise. Gently brush each side with the strawberry syrup. Place a generous amount of the whipped topping/strawberry mixture on the bottom twinkie half. Top with the other half of the twinkie and try and clean around the edges any excess whipped topping and try to make sure the strawberry slices aren't poking out the side.
Place these in the freezer for about 20 minutes to set up.
On a wired rack, using a spoon ladle the melted candiquick over each shortcake then place on a sheet tray that is covered in parchment paper or a silicone mat. Top with sprinkles if desired. Let candiquick set about 10 minutes or place in the refrigerator to set up faster. Serve and enjoy!
