Hare in Ale with Saffron
Ingredients List
- 1 lg Hare
- 1 lb Onions; finely chopped
- 1 5/8 oz Fresh bread crumbs
- 1/2 ts Saffron
- 2 pt Real ale
- Salt and freshly ground
- -pepper
- A little dripping; or oil
- -and butter
Directions
Lightly brown hare pieces in a little dripping, or oil and butter, in a
deep casserole.
Cover with real ale, add onion, bring to boil on stovetop.
Put the casserole in oven, cook at 425øF (220øC) for about 3 hours.
Remove from oven, stir in bread crumbs and saffron.
Check seasonings.
Cook in oven until hare is tender and serve with cooking liquid.
