Healthy Banana Bran Muffins

Ingredients List
- 1 1/4 cups whole wheat flour
- 1/2 cup bran
- 1/4 cup flaxmeal
- 1/3 cup raw sugar
- 1/2 cup apple sauce
- 1 teaspoons baking powder
- 1 teaspoon baking soda
- 2 whole eggs
- 1/2 cup yogurt
- 1/2 cup milk + 1 tablespoon extra.
- 1 tablespoons butter (melted)
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 2 bananas (overripe - mashed)
- 1/2 cup walnuts (chopped)
- 1/4 cup dates (chopped)
- 1/4 raisins
Directions
Preheat oven to 375 degrees.
1. Chop dates and walnuts.
2. Mash overrripe bananas.
3. Combine flour, bran, flaxmeal, baking powder, sugar and cinnamon in a bowl.
4. In a separate bowl whisk eggs then combine milk, yogurt, apple sauce, vanilla and melted butter.
5. In a microwave proof cup/small bowl combine baking soda and 1 tablespoon milk, then heat in microwave for 10 secs.
6. Add baking soda and milk mixture to wet mixture and combine.
7. Fold wet mixture into dry ingredients. Combine well.
8. Fold mashed banana and fruit/nuts into mixture until just combined (don't over stir).
9. Divide mixture into a 12 hole muffin pan and bake for 20 - 25 minutes or until muffins are golden on top.
