Healthy Blueberry Muffins

  • 1.5 cups whole wheat flour
  • 1/4 cup sugar (or substitute)
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 teaspoon salt
  • 1/2 cup apple sauce
  • 2, 6 oz containers fat free lemon yogurt
  • 1 large egg
  • 1 tsp vanilla
  • zest of 1 lemon
  • 2 cups blueberries


Preheat oven to 375 degrees F. Thoroughly grease and flour a muffin pan (or use paper muffin liners).
In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. Set aside.
In another bowl blend the apple sauce, yogurt, egg and vanilla thoroughly. Stir the wet mixture into the flour mixture just until combined. The batter will be very thick. Add the blueberries and stir gently. Gently pour the batter into the prepared muffin pan and bake immediately. Bake for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow to cool before serving!
