Healthy Lettuce Wraps

Ingredients List
- 2 lbs of ground chicken or turkey
- 1 yellow onion
- 2 tsp minced garlic
- 2 inch nop fresh ginger
- 3 tbsp sesame oil
- 7 tbsp low sodium soy sauce
- 1 tbsp water
- 3 tbsp peanut butter
- 2 tbsp honey
- 4 tbsp rice vinegar
- 2 1/2 tsp chili garlic sauce (if you are sensitive to spicy things, adjust accordingly. For me, I like it spicy so I actually do 3 tsp all together)
- 6 green onions
- 2 8oz cans of sliced waterchestnuts
- 2 heads of iceberg lettuce
Directions
1. Heat large non-stick skillet over high with a tbsp of olive oil. Chop onion, peel and mince fresh ginger.
2. Combine minced garlic, minced ginger, chopped onion and ground chicken/turkey in skillet. Cover skillet and continue cooking until meat is no longer pink. Stir frequently to break up the pieces of chicken/turkey.
3. While cooking, combine sesame oil, soy sauce, water, peanut butter, honey, rice vinegar, and chili garlic sauce in a microwave safe bowl. Heat for 1 minute and then stir until sauce is smooth.
4. Once meat is no longer pink, drain excess liquid from skillet and then add the sauce to skillet. Continue cooking over medium-low heat.
5. Chop green onion and water chestnuts. Add to skillet. Let simmer over medium-low heat for 10 minutes and then serve with washed lettuce leaves.
