Healthy Pork Lo Mein

 Ingredients List

  • 12 ounces boneless pork loin
  • 1 tablespoon sesame seeds
  • 1 tablespoon grated fresh ginger
  • 4 cloves garlic, minced
  • 1/3 cup reduced-sodium chicken broth
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon Asian chili sauce (Sriracha sauce)
  • 4 ounces dried Chinese egg noodles (lo mein noodles)
  • Nonstick cooking spray
  • 1 cup sliced celery (2 stalks)
  • 1 medium red sweet pepper, seeded and cut into thin bite-size strips
  • 3 cups coarsely shredded bok choy or napa cabbage
  • 1 8 ounce can sliced bamboo shoots, rinsed and drained
  • 6 tablespoons thinly sliced green onions (3)
  • 2 teaspoons toasted sesame oil

 Directions

1. Trim fat from meat. Cut meat into thin bite-size strips. In a medium bowl combine meat, sesame seeds, ginger, and garlic; set aside. For sauce, in a small bowl combine broth, soy sauce, vinegar, cornstarch, sugar, and chili sauce; set aside. Cook noodles in boiling, lightly salted water according to package directions;* drain. Rinse with cold water; drain again.

2. Coat a large skillet or wok with cooking spray; heat skillet over medium-high heat. Add celery and sweet pepper; cook and stir for 4 minutes. Add bok choy, bamboo shoots, and green onions; cook and stir for 2 minutes more. Remove vegetables from skillet.

3. Add sesame oil to skillet; add meat mixture. Cook and stir for 2 to 3 minutes or until meat is slightly pink in center. Push from center of skillet. Stir sauce; add to center of skillet. Cook and stir until thickened and bubbly. Add cooked noodles and vegetables; stir all ingredients together to coat with sauce. Cook and stir about 2 minutes or until heated through.
