Hearts of Palm and Zucchini Salad

 Ingredients List

  • 1 cn Hearts of palm (150z); drain
  • -and dice
  • 1 cl Garlic
  • 2 tb Jalapeno vinegar*
  • 1/2 ts Salt
  • 1/2 ts Pepper
  • 6 tb Olive oil
  • 1 md Zucchini; diced
  • 1 md Tomato; diced
  • 1/2 Sweet onion; diced

 Directions

Combine all the ingredients and refrigerate for at
least 2 hours. Spoon onto a bed of mixed lettuce.
*Note: you can substitute the liquid from a jar of
pickled jalapeno for the Jalapeno vinegar
