Hearty Split Pea Soup with Ham

- 2 1/4 cups dried split peas
- 1 1/2 pounds ham bone
- 1 cup finely chopped yellow onions
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pinch dried marjoram
- 1 bay leaf
- 2 stalks celery, chopped
- 3 carrots, chopped
- 1 leek, diced
- 1 bay leaf
Directions
Place the peas in a large pot, cover with water by 2 inches and soak overnight. Drain the peas and set aside.
Once peas are soaked, add ham, onion, salt, pepper, marjoram and bay leaf. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
Remove bone; cut off meat, dice and return meat to soup. Add onion, celery, carrots and leek.
Cook slowly, uncovered for 1 hour or until vegetables are tender. Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately.
