Helen Cornelius' Rainbow Trout

 Ingredients List

  • 6 Rainbow trout; cleaned, (8
  • oz Ea)
  • 2 ts Salt
  • 6 sl Bacon, thin
  • 12 sl Lemon
  • 1/2 c Vegetable oil


Preheat oven to 350 . Wash trout thoroughly and sprinkle inside with
1 1/2 tsp. salt. Place 1 slice bacon and 2 slices lemon inside each.
Use toothpicks to hold in place. Brush outside of trout with oil and
sprinkle with the remaining salt. Wrap each fish loosely in foil.
Bake for 35-40 minutes. Serve with mixed green salad and cornbread.
Makes 6 servings.
