Herbed Crab Sandwiches

  • 1 lb Lump crabmeat
  • 2 tb Low fat mayonnaise; plus 2
  • -teaspoons
  • 2 ts Fresh parsley; minced
  • 2 ts Fresh tarragon; minced
  • 1 tb Scallions; plus 1 tsp.,
  • -minced
  • 1/4 lb Low fat cream cheese
  • 2 Eggs; beaten
  • 3/4 ts Dijon mustard
  • 4 English muffins; split and
  • -toasted
  • 4 sl Tomato


Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium
bowl. In a separate bowl, beat together the cream cheese, eggs, and
mustard. Spread the crab mixture over the English muffins. Spread the cream
cheese mixture on top, and broil the muffins 6 inches from the heat source
for 3 minutes. Add the tomato slices and broil again for 2 more minutes.
