Homemade Baked Potato Soup

Ingredients List
- 1/2 pound bacon cut into dime/quarter size pieces ($3) (+ more for garnish)
- 1 c. chopped onion ($0.50)
- 2/3 c. flour
- 6 c. chicken stock ($3)
- 4 c. peeled and chopped baked (russet) potatoes ”“ about 5 potatoes ($1)
- 2 c. heavy cream ($1.50)
- 1/2 c. fresh parsley diced ($1)
- 1 clove garlic
- 1.5 tsp. dry ground basil
- 1 tsp. salt
- 1.5 tsp. pepper
- 1 c. cheddar cheese (+ more for garnish) ($2)
- Chopped green onion (for garnish) ($1)
Directions
1. Cook all of the bacon in the pan that you plan on cooking your soup in. Remove the bacon from the pan with a slotted spoon and set on a paper towel. Save the grease from the bacon (all or some, up to you”¦I left all of the grease because I am in love with bacon. to cook your onions until translucent. Heat up half of the chicken stock (in the microwave is fine) and add the flour, stirring with a whisk (one like this is fine) to make a cloudy liquid. Add the stock/flour mixture to your onion mixture. Heat to a good simmer, stirring constantly to thicken. Set to low simmer, and add the rest of the ingredients (minus the bacon). Add half of the bacon to the soup and save the remainder for garnish. Sprinkle bowls of soup with cheese and green onions. This soup makes about eight 8 oz. cups and is awesome served in a bread bowl or in a regular bowl, too. Make sure to grab your coupons before you head to the store!
