Homemade Chicken-Lemon Soup

Homemade Chicken-Lemon Soup

Ingredients List
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 32 oz carton of chicken broth (or 4 cups)
- 2 cups water
- 3/4 cup uncooked rice (I like to use Basmati rice in this.)
- Juice of 1 lemon
- 2 tsp cornstarch
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg, lightly beaten
- 2 cups of chopped or shredded cooked chicken
- chopped fresh parsley and lemon wedges- for garnishing (optional)
Directions
Heat the olive oil in a dutch oven over medium-high heat. Add the onions & garlic and saute for about 2 minutes.
Pour in the chicken broth and water. Bring to a boil and then stir in your uncooked rice.
Reduce the heat and allow it to simmer for about 15 minutes.
While the rice is simmering, whisk together the lemon juice, egg, cornstarch, salt, & pepper in a small bowl.
Slowly the whisk the egg mixture into the broth & rice.
Add in the chicken and continue to simmer it until the rice is done, the soup has thickened slightly, and the chicken is heated through.
Ladle into bowls and garnish with lemon wedges and fresh chopped parsley, if you like.
