Homemade Corned Beef Recipe

Ingredients List
- 4 pounds beef brisket,
- 1 cup salt,
- 1/2 cup sugar,
- 2 quarts water,
- 2 tablespoons saltpeter,
- 1 teaspoon cinnamon pieces,
- 1 teaspoon crumbed bay leaves,
- 1 teaspoon black peppercorns,
- 6 garlic cloves,
- 6 allspice berries,
- 8 juniper berries,
- 1/2 teaspoon ginger powder,
- 2 pound brown rice,
- 1 chopped onion,
- 1 diced carrot,
- 1 chopped celery stalk
Directions
1. Pour the water into a pot and stir in the salt, sugar, saltpeter, cinnamon, peppercorns, cloves, allspice berries, juniper berries, bay leaves and ginger powder. Mix well.
2. Heat the pot with high heat and stir constantly to dissolve the salt and sugar. Remove from the heat and put it into fridge to let the brine reach a temperature of 45 degrees.
3. Put the beef into a zip top bag and dip it into the brine. Cover the pot and put it into fridge for about 10 days. Check it daily to make sure the beef is covered by water and stir the brine evenly.
4. Take the beef out of the brine after 10 days and rinse it under cool water. Put the beef to a large pot and put the onion, carrot and celery into it. Cover with water.
5. Put the pot over high heat and bring to a boil. Turn down the heat to low and simmer for about 3 hours until the meat is tender.
6. Turn off the heat and take the beef out of the pot. Chop the beef into slices and serve directly or with your favorite sauce.
