Hominy Corn Bread

 Ingredients List

  • 1 c Hominy
  • 1 tb Melted shortening
  • 2 Eggs, well beaten
  • 1/2 c Corn-meal
  • 1/2 ts Salt
  • 1 ts Baking powder
  • 1 c Milk

 Directions

Combine hominy, shortening, eggs, and milk. Add corn-meal, salt, and
baking powder. Let stand 5 minutes. Add 1 tablespoon more of milk if
desirable. Pour into well-oiled pan and bake in hot oven (425 F) 35 minutes
or until a rich golden brown. 6 servings. Florence Taft Eaton, Concord,
