Hoppin' John with Black Eyed Pea

- ham bone
- water (approx. 3 cups)
- 1 cup dried black-eyed peas, rinsed and soaked overnight
- 1 cup long-grain rice
- salt and pepper
- dash Tabasco sauce, optional
Directions
A dish of black eyed peas is a New Year's tradition in most areas, as it's thought to bring luck and prosperity for the new year.
Here is an old recipe for Hoppin' John, one of the more popular ways of serving them.
Cover the ham bone with water and cook for 2 hours. Add 1 cup dried black-eyed peas which have been washed and soaked overnight. Cook until almost tender. Remove ham from bone, chop, and return to peas. Add 1 cup washed raw rice and the salt and pepper. Boil until rice is tender and liquid has evaporated.
Taste for seasoning and adjust with Tabasco, if needed.
