Hot Brown Sandwich

Directions
Make a basic white sauce and add 1 1/2 cups of grated Cheddar cheese.
Season it with a sprinkling of black and cayenne peppers. Toast 4 to 8
slices of bread (1 or 2 per person). Lay the toast in a large, shallow
baking dish. Top each piece with a thin slice of turkey or chicken, a
generous spreading of sauce, a large slice of country ham, or pieces of
cooked bacon, a large slice of fresh tomato, more cheese sauce to cover it
all, and a sprinkling of Parmesan cheese or paprika, or both. Bake in a 350
degree oven for 20 min., then turn up to broil just long enough to make
sandwiches hot and golden brown. Serve with knife and fork. You can't pick
