Hot Cross Muffins
Ingredients List
- 2 c Flour
- 1 tb Baking Powder
- 1/2 ts Salt
- 1 ts Cinnamon
- 1/4 ts Nutmeg
- 1/2 c Sugar
- 1 Egg; Beaten
- 1/3 c Butter; Melted
- 1 c Milk; 2% Lowfat
- 3/4 c Candied Fruit; Mixed Cut
- 1/2 c Currants; Dried
- 1 c Powdered Sugar; Sifted
- 2 tb Milk; 2% Lowfat
- 1 tb Butter; Melted
- 1/2 ts Vanilla
Directions
Preheat your oven to 400 degrees. Sift the first 6 ingredients together.
Stir in your egg, butter and milk just till blended. Fold in the fruits.
Fill paper-lined (or spray muffin pan with pam) tins full, and bake
approximately 20 minutes. Beat the powdered sugar, milk butter and vanilla
till smooth. Chill. After the muffins are cooled, pipe a cross with your
icing, over each muffin.
