INDIVIDUAL MEATLOAF BALLS

 Ingredients List

  • 2 lbs of your choice of meat (I used 93% fat free ground beef)
  • 4 cups of spinach
  • 2 eggs
  • 1/4 cup of liquid aminos (I use Braggs)
  • 1 cup of mushrooms
  • 1 tsp of chili pepper flakes
  • 1 tsp of onion powder
  • 1 tsp pepper
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 2 to 3 tsp of dried onion flakes
  • 2 cups of mozzarella
  • 1/2 cup of parm cheese
  • 1 small can of tomato paste
  • 1 tbsp. parm cheese
  • 1/2 tsp salt
  • 1 tsp of sweetener (I used truvia)
  • water to thicken

 Directions

1. Mix your spices, liquid aminos and meat. Add eggs, chopped mushrooms, spinach and mix again. Add your cheese and mix well. Grease a 12 muffin tin pan and set on a cookie sheet to catch extra liquid that might falls. Divide your meat mixture amongst the tins. (you could make the balls smaller to make more) Cover with foil and bake at 375 degrees for 30 minutes then cover with your tomato sauce. Leave foil off and bake for another 15 to 25 minutes. If you make smaller balls bake for 10 minutes extra. Serve this with you favorite Trim Healthy Side dish! YUM!
