Instant Pot Creamy Beef Stroganoff

Ingredients List
- 1.5 lbs (750g) sliced steak
- 3 tablespoons flour
- 2 tablespoons unsalted butter
- 1 small onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 lb (450g) mushrooms, sliced
- 1/2 cup sun-dried tomatoes, sliced
- 1/2 cup dry white wine
- 1/2 cup (125ml) beef broth
- 1 cup (225ml) half and half
- Salt and freshly cracked black pepper
- Chopped fresh parsley, for garnish
Directions
1. In a shallow plate, sprinkle beef cubes with flour, salt, pepper, and paprika and toss to coat well. Set your Instant Pot to “sauté” mode and melt butter in the insert. Sear the beef on all side for 5 minutes, until browned.
2. Add sliced mushrooms, sun-dried tomatoes, onion, garlic, Italian herbs, and salt and pepper to taste. Cover with beef broth and white wine and place lid on the Instant Pot, make sure the vent nozzle is in the non-venting position, and set the timer to 15 minutes in “stew mode”.
3. Release pressure, then remove the lid, and switch Instant Pot to “reheat” mode. Stir in half and half and combine until smooth. Adjust seasoning if needed with salt and pepper.
4. Serve over pasta, garnished with chopped parsley, and grated parmesan. Enjoy!
