Judy's Banana Rum Coconut Tart

 Ingredients List

  • 5 oz Pkg
  • Grated)
  • 4 1/2 oz Granulated Sugar
  • 4 1/2 oz Butter
  • 3 Eggs
  • 1/4 c Pastry cream
  • 1 Ripe
  • 1 Capful
  • 1 Pate Sablee or Pate Brisee
  • Tart shell
  • Powdered Sugar -- for
  • Garnish
  • Grated coconut -- (or fresh
  • Mashed banana
  • Dark rum

 Directions

Method: Cream butter in mixing bowl. Add sugar & coconut. Mix in eggs
one at a time. Add pastry cream, bananas & mix. Add rum & mix. Pour into
Pate Sablee or Pate Brisee tart shell and bake at 350 for 30-35 min, or
until done. Let cool & dust with powdered sugar.
