Kielbasa and Cabbage Soup

Ingredients List
- 2 tablespoons canola oil, divided
- 1/2 small yellow onion, chopped
- 3 cups shredded green cabbage (about 1/2 small head)
- 2 small white turnips, peeled and cut in 1-inch cubes
- 14 1/2 ounces chicken broth
- 29 ounces water
- 1 teaspoon bay leaf (1 leaf)
- 1/2 teaspoon caraway seeds
- 1/2 teaspoon salt
- 1 teaspoon granular sugar substitute (sucralose)
- 3/4 pound kielbasa or other fully cooked smoked sausage
- 1 teaspoon red wine vinegar
- 1/8 teaspoon freshly ground black pepper
Directions
1. Heat 1 tablespoon plus 2 teaspoons oil in a large saucepot over medium heat. Cook onion 5 minutes until softened.
2. Add cabbage, turnips, broth, water, bay leaf, caraway seeds, salt, and sugar substitute. Bring to a boil; reduce heat and simmer, partially covered, 20 minutes, until vegetables are tender. Remove bay leaf.
3. Meanwhile, cut sausage in 1/2-inch slices. Heat remaining teaspoons of oil in a medium skillet over medium heat and saute slices 2-3 minutes, turning once, until lightly browned.
4. Stir sausage slices and vinegar into soup. Add pepper and additional salt to taste.
