Kielbasa Breakfast Hash

Ingredients List
- 1 (14 oz.) package kielbasa, cut into 1/4" slices
- 3 Tablespoons olive oil, divided
- 4 small potatoes, diced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- 1 small onion, diced
- 1 small tomato, diced
- 1/2 cup fresh mushrooms, sliced
- 4 eggs
- 1/2 cup shredded cheddar cheese
Directions
Preheat oven to 400 degrees F. Place oven rack on top third of the oven.
In a cast iron skillet set over medium heat, brown kielbasa slices in 1 Tablespoon of olive oil for 5 minutes, flipping once.
While kielbasa is browning, heat remaining olive oil in a large skillet set over medium heat. Add diced potatoes and season with salt, peppers, and garlic powder. Cook over medium heat for 8-10 minutes, until softened.
Add onion to kielbasa skillet and cook an additional 5 minutes, until onions begin to become translucent.
In the final 2 minutes, add tomato and mushrooms to kielbasa and toss, allowing flavors to blend.
Remove both skillets from heat, then transfer potatoes to cast iron skillet with remaining ingredients. Toss to combine, then, using a spoon, make 4 indentations in mixture and crack an egg in each one. Top with shredded cheese and place skillet in preheated oven and bake for 9-12 minutes, until the whites of the eggs are set.
Serve with toast or warm English muffins (or even on a burrito!) and enjoy!
