Latin Veracruz Chicken & Black Bean Burrito Bowls

 Ingredients List

  • 1 tbsp canola oil
  • 1 lb of chicken, cut into strips
  • 1 pouch of Latin Veracruz ImagineĀ® Organic Culinary Simmer Sauce
  • 15 oz can of black beans, drained and rinsed
  • Cooked rice (I used a 10 minute boil-in-the-bag rice)
  • Your favorite burrito toppings- avocado, tomatoes, lettuce, sour cream, shredded cheese, etc
  • Whole wheat tortillas, optional

 Directions

1. Heat the canola oil in a large pan over medium-high heat. Once heated, add the chicken strips to the pan. Brown on all sides, about 2-3 minutes per side. Pour the Latin Veracruz ImagineĀ® Organic Culinary Simmer Sauce over the chicken, add in the black beans, and give a gentle stir. Cook uncovered over medium heat for 15-20 minutes until the chicken is cooked through, stirring often.
