Lemon Chicken #1

 Ingredients List

  • 2 tb Butter
  • 2 Whole chicken breasts
  • 1 cn (4-oz) sliced mushrooms;
  • -drained -or-
  • 1/2 lb Fresh mushrooms; sliced
  • 2 tb Flour
  • 1 1/2 c Liquid (juice from
  • -mushrooms; chicken broth;
  • -water or a combination)
  • 2 ts Lemon juice
  • 2 ts Soy sauce
  • Salt & pepper

 Directions

Debone & cut uncooked chicken breasts into 1/2-inch strips. Melt butter in
skillet & saute chicken & mushrooms until lightly browned. Add flour & stir
until smooth. Add all the liquid, stirring constantly until smooth &
thickened. Add lemon juice & soy sauce, stirring to mix. Salt & pepper to
taste. Cover & steam for about 5 minutes. May be served alone, over rice or
over oriental chicken-flavored noodles prepared according to package
directions. Yields 4 servings.
