Lemon Cupcakes with Blackberry Frosting.

Ingredients List
- ½ cup butter
- 1 cup sugar
- 1½ teaspoons vanilla
- 2 eggs
- 1½ cups flour
- 1¾ teaspoon baking powder
- ½ cup milk
- Zest and juice from 1 lemon
- For the Blackberry Frosting:
- 1 cup butter
- 4 cups powdered sugar
- Pinch of salt
- ½ teaspoon vanilla
- ½ cup seedless blackberry jam
Directions
1. To make cupcakes:
2. In the bowl of a stand mixer cream butter and sugar together.
3. Add 1 egg and beat until incorporated. Add 2nd egg and vanilla and mix to incorporate.
4. Add flour and baking powder and mix thoroughly.
5. Add milk, lemon juice and lemon zest and mix to combine.

7. Bake at 350 degrees for 20-25 minutes.
