Lime Chicken Shish Kabob

 Ingredients List

  • 2 Chicken breasts, cut in
  • Cubes
  • 2 Limes, juice of
  • 2 cl Garlic, minced
  • 1 tb Low sodium soy sauce
  • 1 tb Apple juice concentrate
  • 8 oz Medium mushrooms
  • 1 Red bell pepper, cut in 1"
  • Cubes
  • 16 White pearl onions
  • 1 Green bell pepper, cut in 1"
  • Pieces
  • 2 sm Zucchini, cubed


Combine lime juice, garlic, soy sauce and apple juice and marinate the
chicken in it in the refrigerator at least 2 hours, turning occasionally.
Alternate chicken and vegetables on skewers. Grill or broil about 10
minutes, turning and basting with marinade.
