Limed Snapper
Ingredients List
- 1/3 c Chopped scallions
- 2 tb Butter
- 2 Chopped ripe tomatoes
- 3 tb Fresh lime juice
- 2 tb Chopped green chiles
- 1 tb Chopped parsley
- 1/8 ts Salt
- 1/8 ts Garlic salt
- White pepper
- 1 lb Red snapper fillets
- Lime wedges
Directions
Saute' scallions in butter until tender. Add remaining ingredients
except snapper & lime wedges; bring to boil. Reduce heat & simmer 10
minutes. Put snapper in sauce; spoon over fish. Cover & simmer 10
minutes longer. Serve on heated platter surrounded by lime wedges.
May also be served with a bed of brown rice.
