Love Avocados For Cinco De Mayo Sweepstakes

Ingredients List
- 8 dried figs, chopped
- â…“ cup water
- 3 avocados, peeled and pitted
- 5 eggs
- ¼ cup pure maple syrup
- ¼ cup coconut palm sugar
- 2 tsp vanilla
- 1 tsp cinnamon
- ¼ tsp chile powder
- 2 4 oz high quality super dark chocolate bars (86% cocoa)
Directions
1. In a small saucepan, boil water and dried figs for 5 minutes.
Cover and turn off the burner.
2. Let them sit for 20 minutes to soak up the liquid.
3. Combine figs with liquid, avocados, eggs, maple syrup, palm sugar, vanilla, cinnamon and chile powder in a food processor.
4. Process on low for 30 seconds to get the avocado cut up, then turn on high for another minute.
5. Melt chocolate in a microwavable bowl in 30 second increments, stirring between, until smooth.
6. Add to avocado mixture and process again until the chocolate is well mixed.
7. Pour into a greased spring form pan.
8. Bake at 375 degrees for 20-25 minutes.
9. Remove from oven.
10. Let sit 15 minutes, then put in refrigerator to cool completely.
11. Serve dusted with powdered sugar or drizzled with caramel or chocolate sauce or with whipped cream, if desired.
