Low-Carb Mock "Potato" Soup

 Ingredients List

  • 1 Head of Cauliflower, diced/chunked/ripped apart (do whatever works for you, lol)
  • 1 Onion, diced
  • 4 Cups of Chicken broth (I use Great Value 99% Fat free broth in the box)
  • 3 Tablespoons of Butter
  • 1/2 Cup of Heavy Cream
  • 4 Oz. Cheddar Cheese, Shredded


Garnish Suggestions: Bacon (crisp and crumbled), Green onions, Cheddar Cheese, Parsley, a dallop of Sour Cream, Salt and Pepper to Taste. (Pictured here, green onions, cheddar & bacon) Use what'cha like!

In a large pot, bring cauliflower, onion, and 3 cups of broth to a boil. Cover and simmer for 20-25 minutes until the cauliflower is tender.
Place soup into a bowl and put 1/3 of it into a blender, add last cup of broth and blend. Dump back into pot.
Put another 1/3 of soup into blender, add cream and blend. Dump back into pot.
Put last 1/3 of soup into the blender with the butter and the juices left in bowl and blend. Dump back into pot.

Mix well. Stir in the Cheddar cheese a little bit at a time and melt it all in there.

Serve and pile on your toppings of choice, Viola! I love this one, hard to tell it's not potato too.
