Low-Fat Rice Pudding
Ingredients List
- 2 Egg whites
- 1 Egg
- 2 c Cooked rice
- 1/2 c Sugar
- 1/2 c Raisins
- 2 c Skim milk
- 1/2 ts Vanilla
- 1/4 ts Ground cardamom
- Ground cinnamon
Directions
Heat oven to 325*. Beat egg whites and egg in ungreased 1 1/2 qt casserole.
Stir in remaining ingredients. Sprinkle with cinnamon to taste. Bake
uncovered 50-60 minutes, stirring after 30 minutes, until knife inserted
halfway between center and edge comes out clean. Serve warm or cold.
Immediately refrigerate any remaining pudding.
