Lucky Charms Ice Cream
Ingredients List
- 2 cups heavy cream
- 1 1/4 cups whole milk
- 2/3 cup granulated sugar
- 1 1/2 cups Lucky Charms cereal
- 4 teaspoons cornstarch
- 2 tablespoons corn syrup
- 1/4 teaspoon salt
- 1 cup Lucky Charms marshmallows
Directions
1. Take 1 cup milk and the Lucky Charms cereal (keep the 1 cup of marshmallows separate) and place in an air tight bowl and let sit overnight (or at least 8 hours) in the fridge.
2. In a bowl, stir together 1/4 cup cream and the cornstarch; set slurry aside.
3. In a 4-qt. saucepan, whisk together remaining heavy and the cream, sugar, syrup, and salt; bring to a boil over medium-high heat. Cook for 4 minutes; stir in slurry.
4. Let the mixture cool to room temperature. Then add the cream mixture and the milk/Lucky Charms mixture to a blender. Run it through the blender until the mixture is smooth and no cereal chunks are left.
5. Pour mixture into an airtight container and refrigerate for 2 hours.
6. Pour mixture into an ice cream maker; process according to manufacturer”™s instructions.
7. Pour soft ice cream into a bowl. Fold in the Lucky Charms marshmallows and try to distribute them evenly.
8.Transfer ice cream to a storage container and freeze until set.
