Maltaise Asparagus Sauce
Ingredients List
- 1/2 c Unsalted Butter
- 3 lg Egg Yolks
- 1 1/2 ts Hot Water
- 2 ts Orange Juice
- 1 ts Lemon Juice
- 1 ts Minced Orange Zest
- 1/4 ts Salt
- 2 ds Tabasco Sauce
Directions
Melt butter. Heat egg yolks and 1-1/2 ts water in top of double boiler
over simmering water, whisking constantly, until yolks triple in volume.
Remove pan from water; whisk butter very gradually into egg yolks. Whisk
in remaining ingredients. Let stand at room temperature until ready to
