Mama's Best Meatloaf Recipe
Ingredients List
- 2-1/2 pounds lean ground beef
- 4 slices bread, torn into small pieces
- 2 carrots, finely chopped
- 2 celery ribs, finely chopped
- 1 medium sweet onion, finely chopped
- 2 tablespoons parsley
- 2 cloves garlic, minced
- 2 teaspoons dry mustard
- 1 tablespoon Worcestershire Sauce
- 1/2 cup ketchup
- 1 tablespoon kosher salt (or 2 teaspoons of table salt)
- 1 teaspoon black pepper
- 1 egg, slightly beaten
- For Topping:
- 1/2 cup ketchup
- 1 teaspoon dry mustard
- 2 tablespoon brown sugar
Directions
Preheat oven to 375° F.
Place your torn bread in the bowl of a food processor.
Process into small crumbs.
Dump the bread crumbs into a large bowl.
Replace the bowl on the food processor and add the carrots, onion, celery and garlic.
Process for a few seconds. Remove lid and scrape down the sides.
Continue processing until the vegetables are extremely fine.
Place all of the ingredients in a large bowl.
Mix well. You're gonna have to use your hands to get it mixed up good. I've never known anyone to be able to mix meatloaf up using a spoon.
Place in a 9 x 13 glass baking dish and shape into a loaf...wait a minute...something doesn't look right. Oops, I forgot the parsley.
Okay, if you forgot to add the parsley like I did, dump it back into the bowl and add the parsley.
Okay, now you'll need to mix it up one more time.
Put it back into the baking dish and shape it into a loaf.
In a small bowl mix together the topping ingredients.
Spread the topping on the meatloaf. Don't get it too close to the edge or it will slide off in the oven.
Bake in a preheated 375° oven for 1 hour or until it reaches an internal temperature of 170°.
Allow to rest for at least 10 minutes before slicing so that the juices don't all run out when you cut it.
