Mango Mayonnaise and Shrimp

 Ingredients List

  • 1/2 c Reduced-fat mayonnaise; or
  • -light mayonnaise
  • 1/2 c Mango puree; fresh or thawed
  • -frozen
  • 1/4 c Light sour cream
  • 1/4 ts Salt
  • 1/8 ts Pepper
  • 2 tb Lime juice
  • 8 oz Medium shrimp; cooked,
  • -shelled and deveined
  • 20 Melba rounds or toasts

 Directions

In small bowl, combine mayonnaise, mango puree, sour cream, salt, pepper
and lime juice. Spoon mayonnaise mixture onto melba rounds; top with a
shrimp.

Makes 20 servings. Preparation time: About 10 minutes.
