Directions
For Apple Bars:
Line a 13x9-inch pan with foil or parchment paper, letting the sides extend over the edges.
Lightly coat with non-stick spray.
In a large bowl, beat the butter and brown sugar.
Beat in maple syrup, vanilla, and eggs.
In a medium bowl, combine flour, cinnamon, apple pie spice, salt, and baking soda.
Add the dry ingredients to the mixing bowl, and beat until just combined.
Fold in chopped apples.
Spread batter into prepared pan.
Bake at 350 degrees for 25-30 minutes, or until the edges are golden, and a toothpick inserted near the center comes out mostly clean, with a few moist crumbs.
Remove from heat to a wire rack to cool.
For Maple Glaze:
Meanwhile, in a small saucepan over medium heat, melt the butter.
Add maple syrup and brown sugar.
Bring to a simmer, and cook for 4-5 minutes, or until glaze is slightly thickened and reduced.
Remove from heat, and add vanilla.
Pour glaze evenly over blondies.
Cool completely. Cut into bars.
