Marinated Black-Eyed Peas

 Ingredients List

  • 2 c Cooked black-eyed peas
  • 1 md Red bell pepper, cut into 1"
  • -- strips
  • 2 Minced scallions
  • 3 tb Minced fresh parsley
  • 3 tb Olive oil
  • Juice of 1 lemon
  • 1 Garlic clove, crushed
  • Salt & pepper
  • Dark green lettuce leaves


Combine all the ingredients except the lettuce in a mixing bowl. Cover &
let stand in the fridge for an hour or so. Stir occasionally. Before
serving, remove garlic. Line a shallow serving bowl with lettuce leaves &
top with the pea mixture.

This recipe is better if prepared a day ahead. For real good luck, drop
some coins into it before serving.
