Marinated Crab Claws

Ingredients List
- 1 cup Olive oil
- 1 tbsp Garlic finely minced
- 1 tsp. Red pepper flakes
- 1 Jalapeno Pepper small, seeds discarded, finely slivered
- 1â„2 cup Tarragon vinegar
- 1 lb. Crab claws (or Spiny Lobster or Shrimp) cooked
- 1â„2 cup Parsley finely minced
- 1 cup Cherry tomatoes (or Grape Tomatoes) small, halved
- 3â„4 tsp Black pepper
- 3â„4 tsp Kosher salt
- Lemon cut into wedges, for serving
- French bread for serving
Directions
1. Combine olive oil, garlic, red pepper flakes, and slivered jalapeño pepper in a pint jar with a lid and set aside for 1 hour.
2. Add tarragon vinegar, cover, and shake vigorously to emulsify.
3. Place remaining ingredients in a non-reactive bowl and pour oil and vinegar mixture over the top; stir gently to combine.
4. Cover and refrigerate 2 hours or overnight.
5. Serve with lemon wedges and crusty French bread.
