Marinated Cucumber Salad

 Ingredients List

  • 1/2 c Italian dressing;
  • -commercial low-calorie
  • 1/8 ts Pepper
  • 1 md Cucumber; peeled
  • -thinly sliced
  • 1/2 sm Onion; thinly sliced
  • 1/4 c Radishes; thinly sliced
  • 2 tb Fresh parsley; chopped


Combine Italian dressing and pepper in a medium bowl, stirring well.
Add Cucumber, onion, radishes, and parsley. Toss gently to coat.
Cover and marinate in refrigerator at least 4 hours. Serve salad,
using a slotted spoon.
