Marinated Green Beans
Ingredients List
- 1/2 Bushel baby green beans, or
- -'french cut' mature beans
- 1/4 Box salt
- Whole cloves of garlic
- 4 c White vinegar
- 1 1/2 tb Sugar
- Olive or canola oil
Directions
Put washed beans in a basin. Sprinkle with salt and mix with your hands.
Cover with a tea cloth. Put a board and weights on top. Leave 12 hours.
Turn. Leave another 12 hours. Wash, rinse and drain the beans. Boil 8 cups
water with 4 cups vinegar. Add beans and garlic and boil 10 minutes. Add
sugar near end of boiling. Drain. Put in a bowl. Cool two hours. Remove
garlic. Mix with oil. Pack in jars firmly. Cover with oil and seal.
