Category: Side Dishes, Kids, Desserts

 Ingredients List

  • 1 (10.5 oz.) package mini marshmallows, divided
  • 5 cups Rice Krispies or other puffed rice cereal, divided
  • 1/2 cup semi-sweet chocolate chips
  • 3 1/2 tablespoons creamy peanut butter
  • 3 tablespoons butter
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

 Directions

Line a 8x8 or 9x13-inch baking dish with parchment paper or aluminum foil and set aside. Spray a large mixing bowl with non-stick spray.

In a medium saucepan, combine 2 1/2 cups marshmallows, peanut butter and butter, and cook over medium heat. Stir until marshmallows are completely melted and smooth.

In a second saucepan, heat remaining marshmallows with chocolate chips, vanilla extract and salt. Stir until marshmallows and chocolate chips are completely melted and smooth.

Stir half of Rice Krispies into peanut butter mixture and half into the chocolate. Stir until cereal is well-coated and there is no excess peanut butter or chocolate mixture.

Working quickly, pour chocolate Rice Krispies into the peanut butter and mix together until incorporated.

Pour entire mixture into lined baking dish and press down into the sides and corners of the pan. (It”™s easier and less sticky if you lightly spray your hands with non-stick spray).

Set aside until Rice Krispies are cool, then slice into squares and enjoy!
