Mashed Cauliflower Cream Cheese

Ingredients List
- 1 Head Cauliflower
- 2 Oz. Cream Cheese
- 5 Slices Bacon
- 2½ Oz. Cheddar Cheese
- 2½ Oz. Monterey Jack Cheese
- Salt and Pepper to taste
Directions
1. Cook the bacon and crumble
2. Wash, deleave and chop up the cauliflower
3. Bring some water to a boil, then add the cauliflower and boil for 9 minutes
4. While the cauliflower is boiling, cube the cheeses
5. Drain the cauliflower
6. Mash the cauliflower, then add the cream cheese and mash again
7. Season with salt and pepper
8. Stir in the cheese and bacon
(Optional) Transfer to a baking dish and bake for 10 minutes @ 350 degrees
